Weekly Menu....little late!!

Monday- Grilled Cheese....I was gone so hubby fed the kids!!

Tuesday- Southwest Chicken, tortillas and green beans.

SOUTHWEST SLOWCOOKER CHICKEN

chicken breasts
2 cans RoTel
1 can black beans (rinsed and drained)
1 can corn
rice (cooked)

Put all but rice in Crockpot. Cook on high until juices run clear from chicken (about 2 hours).
Remove chicken and stir in rice. Serve chicken over a bed of rice/RoTel/beans/corn. Or, cut chicken into chunks and stir into rice mixture.

Wednesday- BEEF AND TOMATO CROCK POT STEW

2 lbs of stewing beef or any other cut of beef steak that is on sale
2 stalks celery (chopped)
1 small bag baby carrots
1 small can tomato paste
3 medium sized baking potatoes, cubed and peeled
1 900 ml box beef broth
1 packet onion soup mix
dash of garlic salt
dash of Italian seasoning

Thursday- Salisbury Steaks, rosemary potatoes, green beans and rolls! TV night with The Browns!!!

Friday- Hopefully date night but if not something easy!!!

Saturday- Zumbathon and out to eat with friends!!!
