Weekly Menu.....

Monday- Vegetable Stew with cornbread croutons (Weight Watchers Recipe)
I am adding ground turkey to the stew and making pasta for the boys and Marc.
The recipe is 3 points for 1.5 cups of stew.

Tuesday- Meat Loaf, mashed potatoes, green beans and rolls.

Wednesday- Homemade pizza (Weight Watchers BBQ Chicken (6pts) for me and hamburger and pepperoni for the boys and Marc.)

Thursday- Probably Chick Fil A....Noah has a musical at school and Taylor has drum lessons.

Friday- Taco Soup and Southwestern Corn Salad (another WW recipe)

2 points per 1/2 cup serving...

3 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 (15 ounce) can black beans, rinsed and drained
1 (8 ounce) container pre-chopped red, yellow, and green bell pepper mix (about 1 1/2 cups)
1 1/4 cups frozen baby gold and white corn, rinsed and drained
1/3 cup sliced green onions
1 diced peeled avocado
1 jalapeno pepper, seeded and minced

Combine first 5 ingredients in a large bowl, stirring with a whisk. Add black beans and remaining ingredients; toss gently to combine. Serve immediately. Yield: 8 servings (serving size: about 1/2 cup)
