Noah had a program at school the other day and they sang the sweetest songs EVER!! Here is my sweet boy singing two of the songs they sang....

Weekly Menu.....

I am so excited about this week....we have lots going on and that means not a lot of cooking for me!! Wooohooo......

Sunday- Loaded BBQ Baked Potatoes

Monday- Taco Soup and Southwester Corn salad (was supposed to have this Friday but didn't)

Tuesday- Amazing Race night with The Browns

Wednesday- Keith's 40th Birthday Party

Thursday- Dinner with The Lamberts

Friday- Going to Dallas for Emily's makeup shoot for Cotton Candy Store

Saturday- Grilling Hamburgers and hopefully enjoying a beautiful day outside by our pool!!!

Show us Your Life...The Start of The Estes Family

Right out of high school I worked at Sears and had always worked in ladies or jewelry but heard that you could make more money working in Sporting goods because they earned commission on whatever they sold so I asked the manager if I could move to his department and he said SURE!! SO....it was my first day and I was leaning up against a table saw that was in the department across from sporting goods and this man came up to me and said "I will take two of those" so I rang him up!! Wooohoo....that was a good commission!!
There was a boy that working in lawn and garden (Sporting and Lawn and Garden were all together) and he came in and checked the receipts and saw that "his" customer came in and bought TWO table saws and he saw that it was me that sold them and lets just say he was not happy!!! He was SO competitive and I think made like a million a year just working at Sears...exaggeration of course but you get the picture!!
We didn't start out on the best of terms but over time he flirted and teased me and eventually I gave in and went out with him and the rest is history!!! Oh, I knew he kind of liked me when he started ringing sales up in my number!!! LOL!!
To back up to before that incident I knew who he was and vice versa and I thought he was arrogant and he thought I was a snob!! He also said he bet another $50 that he could get a date with me....guess he's still owed $50.
We were 19 and 20 when we got married and have been married for 16 years!!

If you would have told me that first day that he and I would be married and have four children, two which would come from Korea, I would have laughed but as we say when we makes plans that is what they are....just plans. But when God makes them then it is His will and I know that this man was in God's will for me!!!

Weekly Menu.....

Monday- Vegetable Stew with cornbread croutons (Weight Watchers Recipe)
I am adding ground turkey to the stew and making pasta for the boys and Marc.
The recipe is 3 points for 1.5 cups of stew.

Tuesday- Meat Loaf, mashed potatoes, green beans and rolls.

Wednesday- Homemade pizza (Weight Watchers BBQ Chicken (6pts) for me and hamburger and pepperoni for the boys and Marc.)

Thursday- Probably Chick Fil A....Noah has a musical at school and Taylor has drum lessons.

Friday- Taco Soup and Southwestern Corn Salad (another WW recipe)

2 points per 1/2 cup serving...

3 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 (15 ounce) can black beans, rinsed and drained
1 (8 ounce) container pre-chopped red, yellow, and green bell pepper mix (about 1 1/2 cups)
1 1/4 cups frozen baby gold and white corn, rinsed and drained
1/3 cup sliced green onions
1 diced peeled avocado
1 jalapeno pepper, seeded and minced

Directions":
Combine first 5 ingredients in a large bowl, stirring with a whisk. Add black beans and remaining ingredients; toss gently to combine. Serve immediately. Yield: 8 servings (serving size: about 1/2 cup)
Per Serving: Cal 133; Fat 7.6g (sat 1g); Pro 3.5g; Carb 14.7g; Fib 4.9g

Weight Watchers Weigh in.......

Well I did it....I lost 5 pounds!!! That is exactly what I wanted to loose the first week. It was pretty easy too.....I didn't feel like I was deprived of anything and never really felt hungry. I just stayed within my points each day.
I can't wait until our trip in June because I know I am going to feel confident and have a great time!!!

Monday- Sandwiches and pasta salad (steamed veggies and black bean soup for me since I am on WW)

Tuesday- Amazing Race with the Browns

Wednesday- Spinach Lasagna, salad and bread

Thursday- Beef Tips, rice, and green beans (Recipe taken from this blog)

Crock pot-spray with Pam
1 1/2 pounds stew meat
1 envelope Lipton Onion Soup
1 can cream of mushroom
1 cup Sprite
Mix all together an cook it on low all day.

Friday- Emily and I are leaving for her first shoot with Cotton Candy Shop!!!

Saturday- Crawfish with the Berthelots!!

Sunday- Tacos and all the fixin's with our small group!!

Happy 8 month Birthday Emily Grace!!

It's that time again....Emily is 8 months old today!! Crazy how time is flying by! She is looking like a little girl lately....she actually rode in her big girl stroller on Saturday and is sitting in a high chair at restaurants. WOW!! She has 8 teeth and had her first haircut last week at mom's. She weighs about 21-22lbs!! She's a chunker. She is still mostly breast fed but I have given her cereal a few times and this week am introducing her to fruits and veggies!! She is not crazy about it. She is playing with toys or really anything she can get her hands on. Yesterday I walked into the living room and she was on almost on all fours getting into the crawling position! My baby girl is growing up way to fast!!!
Yesterday when her Daddy came home from out of town she looked right at him and said "Da Da"....made his day and mine to!! I love this sweet baby girl and thank God everyday for our "surprise blessing"!!!!

Weight Watchers and some other thoughts.....

Today I joined Weight Watchers and boy was that number an eye opener. I now weigh the most I have ever weighed in my life!! Not a great feeling but I have a precious baby girl sleeping in the next room that made it all worth it. BUT...she is now almost 8 months old and she can not be my excuse anymore! I am actually feeling excited today to start this new journey to get back to my old self again. I want to have more energy and be healthier and I am not gonna lie....I want to be skinny!!! (healthy skinny!!) For me that would be shedding about 40 pounds. That is a huge number but I can do it. I have lost 30 before on WW and can do this too!!
Yesterday I took Noah to Texas Children's to a hypertension specialist because he has had some high blood pressure readings in the last few months. Everything checked out fine but the doctor says he needs to loose 10 pounds too. Poor baby....he is like his momma....can't just eat what he wants and stay trim!! He and I are going to do it together. He is SO disciplined as he really wants to follow what the dietitian told us yesterday and he is excited to go to the store and buy some of the stuff she told him he could eat! I love that boy so much and I am the only one that can help him stay healthy while he is a child. God trusted me with him and I don't want to let Him down!!!

Oh and I have already jogged 1 mile on the treadmill today and am going to walk with good friend Jackie tonight!!! Go me!!!!

Not Me Monday.....


I did not get up to take Taylor to the church to go play paintball and it was so foggy could not find my way back home. I did not end up on the new 99 toll road and and my GPS did not have this road on my map and I did not feel like I was in neverland!!!!! I was NOT scared to death!!!!
(Hubby did finally talk me home.....)

I did not put hubby's beans in the microwave last night without a towel over it and put them in to long for them to explode all over the microwave...it did not look like a bomb of beans went off!!!!

I did not think that my boys and baby girl looked precious in their Easter outfits and I did not think that my hubby was the most handsome man at church yesterday!

Weekly Menu......

Sunday- We had leftover ham, beans and potato salad from our Easter lunch.

Monday- Burger King (bad I know....I am doing the single mom thing for a few days and we had errands and swimming today!!)

Tuesday- Baked chicken and steamed veggies

Wednesday- Amazing Race night with the Browns....Lasagna, Salad and garlic bread (not sure what dessert yet!!!)

Thursday- Beef Stroganoff and Green beans, rolls

Friday- Hibachi grill with hubby and chaperon the 8th grade dance!!!

Saturday- Friends are coming in so not sure what I am going to cook....check back later for this meal!!!

Easter 2010.....

This is Emily in her Easter dress that my aunt made about 15 years ago for her granddaughter. This dress is just one of many!!! She looks like an angel!!


Only Jesse and Emily wanted to see the bunny this year...Emily has on the dress that Charlene made while I was at mom's this week. So precious!!! The girl taking the picture kept telling Jesse to open his eyes...open his eyes....finally I snapped to what she was saying and I said "he can't he's ASIAN...that is as open as they get!!" Sweet boy!!!

This is what the bunny left this morning!!! Noah got Roderick Rules that is from the Diary of a Wimpy kid book that he loves...he has almost finished it!

We had a petting zoo and egg hunt at church on Saturday! They didn't get to just pet the animals they could hold them and carry them around. The boys loved it!!

Sewing in Carmine!! I made a dress.....

This week I went and spent a few days in Carmine with my mom, step dad and aunt. On Tuesday was my sewing lesson day with Aunt Charlene. She taught me how to sew an applique on a onsie or tshirt and the best part was she taught me how to make this precious dress for Emily!! Stay tuned for more creations by me if I can remember what I learned!!
