Weekly Menu.....and the 30 day shred!!

Here is this weeks menu....I am going to try to cook with low fat ingredients to make it all not so fattening. I am also starting the 30 day shred tomorrow with Jillian from Biggest Loser...let's hope I survive!!!
I will keep yall posted on my progress.

Monday- White Chicken Chili
(Hubby has to take some clients out to dinner so this is what the boys and I are having because he doesn't like it!!)

Tuesday- Meatloaf, Macaroni and Cheese, Mixed Veggies
(We are taking dinner to our friends (www.emmadunnam.blogspot.com) and this is what Luke requested!!)

Wednesday- Sour Cream Chicken, Italian Potatoes, and Broccoli

Thursday- Easy Crescent Taco Bake and taco salad

Taco Crescent Bake
1 tube refrigerated crescent rolls
2 cups crushed tortilla chips, divided
1 lb. taco seasoned ground beef, browned (from freezer)
1 (8oz.) container sour cream
1 cup cheddar cheese, shredded
Unroll crescent dough into a rectangle; press onto the bottom and 1 in. up the sides of a greased 13 in x 9 in x 2 in baking dish. Seal seams and perforations. Sprinkle with 1 cup of crushed chips; set aside. In the microwave, heat up your taco seasoned ground beef. Spoon over chips. Top with sour cream, cheese and remaining chips. Bake, uncovered, at 350°F for 25-30 minutes or until crust is lightly browned.

Friday- Sour Cream spinach enchiladas, spanish rice and salad.

The Start of The Man Cave....

Marc is building out the room over our garage to make him a man cave and a little corner will be my craft nook....isn't that nice of him???
Anyway, he and his friend that is helping him were standing there talking about what they were going to do next and all of the sudden Marc fell....almost into my bathroom but he caught himself before going all the way through. It's funny now but he could have been hurt really bad! NOW...I have a beautiful hole in my ceiling right over the bathtub!!
Keep checking back for progress....it is going to be neat when we are done!!

Weekly Menu.....UPDATE!

Well tonight I made the meatball sub and the broccoli salad and it was so good. The salad says it needs to be chilled for 4 hours but I did not do that and it was still great. My picky eater, Noah, loved it but Taylor, my boy that will eat almost anything didn't care for it. I thought it was great!!! And at least my boys got some veggies and so did we.....

Monday- Meatball Subs, broccoli salad, and chips

Broccoli Salad
3 cups fresh broccoli florets
3/4 cup cheddar cheese
2 T. chopped onion
3/4 mayonnaise
1/3 cup sugar
1 1/2 T. red wine vinegar* or cider vinegar
6 bacon strips, cooked and crumbled; or REAL bacon bits*
In a large bowl, combine the broccoli, cheese, and onion. Combine the mayo, sugar, and vinegar; pour over the broccoli mixture and toss to coat. Refrigerate at least 4 hours. Just before serving, stir in the bacon.

Tuesday- Italian Goulash

1 tsp olive oil
1 lb of lean ground beef (94/6)
1 small sweet yellow onion, diced
3-4 baby bell peppers, diced (I used red & orange)
8 oz cremini mushrooms, sliced
4 cloves of garlic, chopped
Sea salt and freshly cracked pepper, to taste
3 cups of Roasted Tomato, Onion & Garlic Marinara
12 oz elbow macaroni, cooked per instructions
Fresh basil, chiffonade
Asiago, grated
Heat the olive oil in a small Dutch oven over medium heat. Add the onions and mushrooms then cook for 3-4 minutes. Add the ground beef, bell pepper, chopped garlic then season with sea salt and freshly cracked pepper; cook for 4-5 minutes making sure to crumble the ground beef as it cooks. Drain any excess grease from the pan then add the marinara sauce, stir until mixed thoroughly. Simmer the sauce for 1-2 hours so flavors combine.
Cook the elbow macaroni per instructions (make sure to season the water with salt) then drain completely. Combine the macaroni with the sauce, add the fresh basil and mix well. Simmer for 15 minutes so the sauce has time to flavor the noodles. Top with Asiago cheese if desired and serve. Enjoy.

Wednesday- Meat Loaf, Mashed Potatoes, and glazed carrots.

Thursday- Chicken Spaghetti.....I use the Sterling Star recipe from a very old cookbook that I have had forever!! Very easy if anyone wants it let me know!

Friday- We are going to Fredericksburg to see my Dad!! I love Freds!!!

Prayers for My Friends....

I was reading the daily scripture that is on the side of my blog and immediately thought of my friends that are preparing to have to let their little girl go home to be with the Lord this week.

"The Lord will fight for you, you only need to be still." Exodus 14:14

I know the Lord is going to carry them through this tough time just as he has helped them fight this long battle that precious Emma has fought. But, as a fellow parent my heart breaks for them so much. I wish I had the perfect words or knew what I could do to help them but nobody does. They are the most precious family and as a couple love each other deeply and have the biggest faith of anyone I know and I know they will continue to let the Lord fight for them to one day be at peace with it all.
I have barely got to spend any time with Emma but the few times I have seen her or the one time I got to hold her she is an angel on earth....blond wavy hair and fair skin and the most beautiful eyes and soon she will be an angel in heaven not hurting but playing, running, laughing and singing! I for one am blessed that she has touched my family's heart and we will never forget her!!

Please continue to pray for this family!!

Laundry Room is Finished.......

One of my New Years resolutions is to get my house organized and for the past two weeks I have been cleaning out and organizing room by room. This week was the laundry room! It was a MESS before and I have always hated going in there because it just wasn't fun or pretty!! WELL...now I love the way it turned out and all my craft stuff and laundry stuff is organized and in boxes!! Let's hope it stays that way...but I do have to say me and the laundry monster don't always get along! I ALWAYS have mounds of laundry!

Skillet Lasagna Recipe......

I got the recipe off this blog that I am loving lately.......

Sisters Stuff

1 pound ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 cups diced tomatoes, undrained
1 1/4 cups water
1 8-ounce can tomato sauce
1 tablespoon dried parsley flakes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
2 1/2 cups bow tie pasta, uncooked
1 cup cottage cheese
1/4 cup grated Parmesan cheese
Dash basil, pepper

In large skillet, brown beef with onions and garlic; drain. Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt. Mix well. Stir in uncooked pasta. Bring to a boil, stirring occasionally. Reduce heat; cover, simmer for 20 minutes or until pasta is tender, stirring once. Stir in cottage cheese. Cover with and Parmesan cheese, and sprinkle in basil and pepper to taste if desired. Cover and cook for 5 minutes.

My Tips:
* I usually just use dried chopped onion and garlic. It is just easier for me.

My Weekly Menu.....

So I am really TRYING to cook more and since hubby worked late and it was a holiday today I didn't cook but I will start tomorrow!
Here is my menu for this week.....

Tuesday- Taco Soup
Wednesday- Beef Stroganoff
Thursday- Italian Chicken
Friday- Skillet Lasagna

All of these can be done in the crockpot except the lasagna and are really easy!!!

Emily Grace is 5 months old today.......

Today my sweet girl is 5 months old!! Where does the time go? I can't believe she has been here for almost half a year. She has rolled over 4 times now but no one has actually seen her do it except once and that was her Daddy who saw her! I will put her on a pallet and clean in the living room or kitchen and come back and she will have rolled over. She still is 98% breast fed as she will have a bottle occasionally when we go somewhere or have to leave her with grandparents. She is not on baby food or cereal yet because she is 17lbs so doc says she is ok just nursing until she is about 6 months old. She is so happy and NEVER cries!! She still sleeps through the night and goes to bed about 8 or 9 and sleeps until 6:30. She is starting to grad at things and trying to hold toys. When I hug or kiss on her she will grab my face and pull it toward her like she is kissing me. I LOVE IT!!! I included the ones in her hat to remind me that this was a VERY cold day and we have been in the house for two days straight!! The end picture is a sign for Emily's room that Marc picked out at a shop we went into in Carmine. I love what it says.....She had flowers in her hair...flowers everywhere!!! So cute!!!

My 2010 Goals...resolutions or whatever you want to call them....

Well first is my health and the health of my children and husband. So, I am going to start cooking more and all of us are going to start eating more fruits and veggies and drinking more water. I am secretly hoping this baby weight will fall off of me too!!

Want to be better at reading my Bible and REALLY applying what I read and learn from small group and church services! I think I am a pretty good Christian but I can always be better.

I pray a lot about lots of different things but this year I want to REALLY pray! I mean everyday and about specific things....like my marriage, which is great, but can always be better and can glorify Him more. I want to really start praying for my children...especially Taylor who is almost 14!! I mean it won't be to many more years before he could be moving away, going to college and even falling in love. WOW...I can't imagine not being the only "girl" in his life. I pray that the Lord sends him the perfect girl when He thinks Taylor is ready! (I am hoping it's 10-15 years from now!!!) Anyway, there are LOTS of things and people on my prayer lists!!

I want to learn how to sew. Now that I have Emily and have discovered Etsy.com I could go crazy so I have been thinking that I should just learn to sew and make some of her things myself!!

I want to learn to ride my motorcycle. I am hoping to ride my OWN bike in the ride for Emma's benefit!! I only have a couple of months for that one....I will keep yall posted!!

I have lots of little things too but these are the biggies!!!

Today we dedicated Emily Grace......

This morning was Emily's dedication at church along with another precious baby girl. This was a time that we promised to raise her in a Christian home and teach her about the Lord and what it means to be a Christian. She looked like an angel! We had so many of our friends and family there this moring that is was really a special time for all of us. It was sweet to have Pastor Tommy do her dedication as not only is he our preacher but one of our dearest friends. Emily is so blessed to have so many people that love her and so are we!

(you would never know by looking at her that she had spit up twice before the service even started....she was STINKY!!!!)
